Smith alumna Alice Delcourt ’99 was the winner of the Fourteenth Annual International Cous Cous Fest, an international festival of cultural integration held in Sicily.
Delcourt’s recipe featured smoked mackerel on a bed of fruit and herb couscous. A jury made up of journalists, international chefs, and culinary experts awarded Delcourt the overall award for best couscous, as well as the award for best presentation. According to the judges, Delcourt’s recipe won for its “innovation and quality of raw materials, marrying sweet and sour notes so typical of the Sicilian tradition and oriental flavors“.
Delcourt, who was an Italian and government double major at Smith, spent her Junior Year Abroad in Florence, Italy. She is currently the head chef at Erba Brusca, a restaurant in Milan, Italy.
