Remarks: Normally when we think of artificial selection as the source of evolution in agriculture. Here the cartoonist uses the term more broadly for the source of the change is the extraction of nitrogen from air. While this image pre-dates the Haber process, the idea of extracting nitrogen from the air was widespread well before that.
